    List of Ingredients





    1/4 c. can milk
    1/4 c. water
    2 eggs, beaten
    1/2 c. sugar
    1/2 - 2/3 c. flour to thicken
    1 lg. sweet onion
    Oil for deep frying

    Recipe




    Combine can milk, water, eggs and sugar; mix well, add flour to thicken. Slice onion thin. Pour batter over onion rings to form a thick coating. Dredge with flour. Fry in hot oil until brown.



    VIDALIA ONION RINGS
    Vidalia onions sliced and separated
    into rings
    Milk for soaking
    Pancake mix
    Club soda
    Oil for frying
    Salt to taste

    Soak amount of onions you desire for one hour in milk. Lift onions out of milk onto paper towel to catch excess milk. Pour pancake mix into a large bowl. Then add enough club soda to make a good batter. Mix until blended. Dip onion rings into batter and fry until golden brown.


    BEST EVER ONION RINGS


    2 (4 inch) Spanish onions
    1 tsp. salt
    2 c. pancake mix (do not substitute)
    2 c. club soda
    Oil for frying

    Slice onions 1/8 inch thick. Place in bowl with a cover; sprinkle with salt. Refrigerate, covered 2 to 3 hours. Remove from bowl, separate into rings. Dip each ring in plain flour to act as an adhesive to the batter. Combine the pancake mix with only enough of the club soda to give a batter the consistency of buttermilk. Dip floured rings in batter. Fry in about 2 inches of oil at 425 degrees or on medium high on top of stove. Fry only until brown on both sides. Drain well on toweling. Sprinkle with salt.
