    SO GOOD!!! ESPECIALLY WITH SPAGHETTI OR LASAGNA

    1 1/4 c. warm water
    1 3/4 tsp. dry yeast
    1 tsp. honey
    2 tbsp. olive oil
    1 1/2 tsp. salt
    3 1/4 to 3 1/2 c. flour
    Toppings: poppy seeds, garlic salt,
    or sesame seeds

    In large bowl, stir together water, yeast, honey and let sit about 10 minutes until foamy. Stir in 2 tablespoons oil, salt, and 3 cups flour. When ingredients become too difficult to stir, turn out onto counter and knead the dough 8 minutes, until it becomes smooth and elastic, adding more flour as needed to prevent the dough from sticking to counter. Let dough rest for about 5 minutes. On a well floured surface, roll or pat the dough into an 18 x 4 inch rectangle. Brush the surface of the dough with olive oil and let rise until doubled in volume, about 1 hour. Preheat oven to 375 degrees. Gently brush a little more oil over the risen dough and sprinkle with seeds or garlic salt. Using a pizza wheel, cut the dough in short strips about 1 inch wide. Pick a strip up, hold each end with your fingers, and gently stretch to fit the length of the cookie sheet. Continue with the rest of the dough, placing the strips a few inches apart on the tray. (If you can't bake them all at one time, leave the remaining dough in a cool place.) Bake them for about 20 minutes, until they begin to color a golden brown. For variety, add any of the following ingredients to the dough at the end of kneading: 2 tablespoons Parmesan cheese, 1/4 cup chopped fresh herb, 1 chopped, sauteed onion, or 1/2 cup shredded Cheddar cheese. Makes 2 dozen sticks.
