    "This is a good way to make use of the really big zucchinni - the ones that get away because they're under the leaves and you don't see them until it is too late."

    List of Ingredients





    3 eggs

    1 3/4 cup sugar

    1 cup canola oil

    2 ounces unsweetened chocolate, melted and cooled

    1 teaspoon vanilla extract

    2 cups finely shredded zucchini, drained if necessary

    3 cups sifted flour

    1 teaspoon salt

    1 teaspoon baking powder

    1 teaspoon baking soda

    1 tablespoon ground cinnamon

    1 cup chopped pecans




    Recipe



    Pre-heat oven to 350 degrees and grease and flour two pans.

    In a large bowl, beat eggs with sugar and oil. Stir in chocolate, vanilla and zucchini.

    In a medium bowl combine dry ingredients. Stir in dry ingredients to zucchini mixture, just until well blended. Fold in pecans.

    Bake in pre-pared pans 50 to 60 minutes, or until a toothpick inserted in center comes out clean. Makes two loaves.
