2 lbs. 8 oz. can sweet potatoes,
drained
8 oz. crushed pineapple, drained
(save juice)
6 tbsp. margarine, melted
1 tsp. cinnamon
1 tsp. salt
1/2 c. juice (pineapple or orange)
4 tbsp. brown sugar
Recipe
Mash potatoes in food processor (or with mixer). Add all ingredients except pineapple and mix thoroughly. Fold in pineapple and pour into greased 1 1/2 quart casserole. Bake at 350 degrees for 30 minutes or until bubbles. Serves 8.
