    THIS IS ONE OF THE BEST POTATO SALADS

    List of Ingredients




    3 lb. (10) un-pared med. potatoes, well
    scrubbed
    1 1/2 tsp. salt
    1 c. celery, chopped
    3 hard cooked eggs, chopped

    MARINADE:
    1 1/2 tsp. salt
    1 tsp. dry mustard
    1/8 tsp. pepper
    Dash cayenne
    1/4 c. cider vinegar
    1/2 c. salad oil
    1/2 c. green onions, chopped

    Recipe




    Pour just enough boiling water over potatoes and salt to cover. Bring to boil; simmer covered 30-35 minutes. Drain. Cool 20 minutes. Peel warm potatoes and slice. Prepare marinade and pour over still warm potatoes. Refrigerate, covered, at least 2 hours tossing several times. At least 1 hour before serving, toss and add celery, eggs and 1 1/2 + cups mayonnaise to potatoes. Toss gently. Refrigerate, covered until serving. I make the day before and refrigerate overnight. Serves 8-10. Enjoy!
