List of Ingredients
3-4 lg. onions
2/3 c. buttermilk
1 c. flour
1 1/2 tsp. baking powder
1 tsp. salt
1/4 tsp. red pepper
2/3 c. water
1 beaten egg
1 tbsp. vegetable oil
1 tsp. lemon juiceRecipe
Peel and slice onions into separate rings. Pour buttermilk into large shallow pan. Add onion rings and soak 30 minutes. Combine flour, baking powder, slat, red pepper, water, egg, oil, and lemon juice. Stir until smooth. Heat oil to 375 degrees. Remove onion rings from buttermilk and dip into batter. Fry in hot oil until golden brown. Drain on paper.
BELOW IS A RECIPE FOR ONE USING A BOUGHT MIX
2 lg. yellow or white onions
2 c. original Aunt Jemima Pancake Mix
(orange box)
1 1/3 c. water
Combine pancake mix and water and stir until smooth. Slice onions where they will be circular pieces and dip rings, one at a time. Let some of the batter drip off by shaking the ring a little. You can use a fork to dip the rings in the batter. Deep fry onions a few at a time for 2 to 3 minutes or until golden brown. Turn them once. Drain on a paper towel and salt to taste.
AND ONE FOR BAKED RINGS
1 1/2 lbs. sweet onions
Butter
Chopped parsley
Fine bread crumbs
Peel onions and slice 1/4 inch thick. Turn into a shallow buttered casserole and sprinkle liberally with parsley and bread crumbs. Dot with butter and bake in 325 degree oven until tender, about 45 to 55 minutes.
