    1 tbsp pesto
    1 large portabello mushroom cap
    1 oz Swiss cheese
    1 1/4-inch slice onion
    2 slices veggie bacon or 1 slice turkey bacon...cooked

    Recipe



    In nonstick skillet, heat pesto. Place mushroom cap in skillet and cover to steam. Turn mushroom cap several times to even out the cooking and keep coating it in the
    pesto. When mushroom is tender, place in pan with domed side down and fill with bacon & onion. Top with cheese and cover, heat through until cheese melts.
