Oldenberg Grill's Bleu Spinach Dip

2 tablespoons extra-virgin olive oil
1 tablespoon unsalted butter
3 ounces yellow onion, diced
1 ounce minced garlic
1 1/8 ounces flour
4 1/2 ounces heavy cream
15 ounces sour cream
7 ounces Romano cheese, grated
9 ounces bleu cheese
1/4 ounce lemon juice
3/4 teaspoon hot sauce
3/4 teaspoon black pepper, ground
1/8 teaspoon salt
12 ounces frozen chopped spinach, thawed and drained
Recipe
In a large skillet heat the olive oil and butter. When butter has melted, add onions. Saute until translucent. Add garlic and saute 5 minutes. Add flour and cook over low heat for 5 minutes. Add cream and sour cream. Cook until mixture thickens.
Add cheeses and mix thoroughly to incorporate with the other ingredients. Add lemon juice, hot sauce, black pepper and salt. Stir to combine thoroughly.
Fold in drained spinach.
Serve immediately, or store in refrigerator and, when ready to serve, heat serving portion in microwave until hot throughout.
Makes 5 to 6 cups.
