Spinach Feta Bites

List of Ingredients




10 Ounces Spinach, chopped, defrosted,
And Drained Until Dry
1 Medium Onion, diced
2 Tablespoons Olive Oil
4 Eggs, lightly whipped - use 1 or 2 for this
8 Ounces Feta Cheese, crumbled
2 Ounces Parmesan Cheese, grated
Salt and Pepper to Taste
1 Package Phyllo Dough Sheets, defrosted
Butter, melted



Recipe



Mix all ingredients except phyllo and butter. Brush butter on a sheet of phyllo and repeat 3 more times. Cut into approx. 3" strips, making the short strips rather than the length.

Put a spoonful of spinach mixture at one end of the strips and fold flag style. Brush tops with butter and bake @ 350ºF until golden and crisp.
