    1 cup softened butter
    1½ cups sugar
    1 egg
    1 teaspoon vanilla
    2½ cups flour
    1½ teaspoons baking powder
    ½ teaspoon salt
    ½ teaspoon almond extract
    Red food coloring
    ½ cup chopped pecans or walnuts
    1 ounce melted unsweetened chocolate

    Line bottom and sides of two 9-by- 5-by-3-inch loaf pans with waxed paper.

    Beat butter in a large mixing bowl. Gradually add sugar, beating until light and fluffy. Add egg, and beat well. Stir in vanilla. Combine flour, baking powder and salt in a medium mixing bowl. Add to creamed mixture, beating until just blended.

    Heat oven to 350 degrees.

    Divide dough into thirds. Add almond extract and 5 drops red food coloring to one portion; spread half of the mixture evenly in prepared pans. Add pecans to second portion; spread mixture evenly over dough in pans. Add melted chocolate to last portion; spread dough evenly over dough in pans. Cover and refrigerate overnight. Turn dough out of pans. Remove wax paper. Cut doughs in half lengthwise (depending on size of loaf pans, you may want to cut dough into thirds). Cut each half or third crosswise into 1/8-inch slices. Place on ungreased cookie sheet. Bake for 10 to 12 minutes. Remove to wire racks to cool. Store in airtight containers.

    Makes about 5 dozen.
