Crockpot Hoisin Chicken

List of Ingredients
3 pounds chicken thighs and legs, or pieces
1/4 cup hoisin sauce
1/4 cup plum sauce
1/4 cup soy sauce
1 medium piece fresh ginger root, thinly sliced
Juice of 1 lime
4 garlic cloves, minced
1/2 teaspoon dried hot red pepper flakes
3 tablespoons cornstarch
Recipe
DIRECTIONS:
Remove the skin from the chicken.
Using a paper towel helps to remove
the skin easily.
Mix all the ingredients (except chicken)
in a bowl. Add chicken, coat well and place
in crockpot. Cook 5-6 hours on low.
Serve with rice.
Bean's notes: I doubled the liquid ingredients and added 1 cup chicken broth so I'd have enough to mix with the rice noodles. I cooked the rice noodles with soy sauce, plum sauce, a little sauce from the crockpot & some water, when they were done absorbing the liquid I added the rest of the sauce from the cooked chicken. I sliced the chicken, added sliced green onions & used Thai crushed peppers.
*The chicken cooked in 3 1/2 hours, watch closely because the sauce could burn. I don't think I'd leave this one alone.
