    ¾ to 1 pound bay scallops
    - 1 tablespoon olive oil
    - 1½ tablespoons prepared Cajun seasoning
    - 1 tablespoon lime juice
    - 2 tablespoons chopped Italian parsley

    Recipe



    1. Drain any liquid around scallops, then spread on a plate lined with a couple layers of paper towels. Let drain a few minutes.

    2. Place a heavy 10- to 12-inch skillet on medium-high heat about 4 minutes. Add oil. When hot, spread scallops in pan; sprinkle with seasoning. Cook quickly, about 2 to 3 minutes, until just cooked through.

    3. Transfer scallops with a slotted spoon to a bowl. Add lime juice to pan juices and boil briefly to thicken. Pour juices that have accumulated around scallops into pan and boil again. Pour over scallops, mix in parsley and serve immediately.
