    Chili Crusted Scallops

    3tbs fresh lemon juice
    1TBS light brown sugar
    2tsp chili powder
    1/2 tsp lemon zest
    1/2tsp ground cumin
    1/2 tsp table salt
    1/4 tsp cayenne pepper
    1lb scallops (sea scallops work best)


    Recipe

    Preheat broiler. Coat a large baking sheet with cooking spray.

    Whisk together lemon juice, sugar, chili powder, lemon zest, cumin, salt, and cayenne in a small sauce pan. Set pan over medium-low heat and simmer until mixture thickens, about 2-3 minutes. Transfer mixture to a shallow dish; add scallops and turn to coat.

    Transfer scallops to prepared baking sheet and broil until cooked through or opaque; about 3-5 minutes per side.


    Note: The lemon flavor is quite strong. Perhaps use less or no zest?
