1 c dehydrated potato flakes
1 c Aunt Jemima pancake mix
½ c plain breadcrumbs
2 ½ lbs fish filets
Recipe
Heat 2 cups lard in large cast iron skillet. Mix dry ingredients in a large wide dish.
Cut filets into large pieces. Season fish on both sides with lemon pepper to taste, then dredge in dry mixture. Shake off excess. Fry fish in batches, turning once, about 3-4 minutes per batch.
