    Shrimp Scampi (or Scallop Scampi)
    2 lbs. fresh shrimp or scallops
    8 tbsp. butter (1 stick)
    1/2 cup olive oil
    1 tbsp. lemon juice
    1/4 cup finely chopped shallots or scallions
    1 tbsp. finely chopped garlic
    1 tsp. salt
    freshly ground black pepper
    4 tbsp. finely chopped parsley
    lemon quarters

    Clean shrimp or scallops. Preheat boiler to highest temperature. In a shallow baking dish, melt butter and add oil, lemon juice, chopped shallots, garlic, salt and a few grindings of pepper. Add shrimp or scallops and turn them in butter or oil until they glisten on all sides. Broil 3-4" from heat for 5 minutes, then turn over and broil 5-10 minutes longer, or until lightly browned and firm to the touch. Be careful not to overcook. Transfer to a serving plate, pour sauce over them and garnish with chopped parsley and lemon quarters.
