    Calamari Arrabbiata

    List of Ingredients

    2 ounces extra virgin olive oil
    1 ounce fresh garlic
    4 ounces white wine
    4 ounces hot pepper rings
    8 to 10 whole black olives
    Pinch salt
    Pinch black pepper
    6 ounces pomodoro sauce (marinara can be substituted)
    2 ounces seafood stock, seafood juice or clam juice
    1/2 ounce fresh basil
    8 ounces calamari rings (see note)
    1 egg
    1 tablespoon milk
    1/2 cup flour
    1/4 cup breadcrumbs
    10 ounces squid ink fettucine



    Recipe

    Prepare calamari: Combine egg and milk. Combine flour and breadcrumbs. Dip calamari in egg mixture, then dredge through crumb mixture. Pan fry until tender. Drain, set aside.

    Cook fettucine in boiling water with pinch salt for 4 or 5 minutes, drain.

    Combine olive oil, garlic, wine, pepper rings, olives, basil, salt, pepper, sauce and seafood stock or juice in heavy pan. Simmer for 3 to 4 minutes. Add calamari and fettucine. Toss thoroughly.

    Serve hot.

    Note: Don't limit yourself to rings. Tube and tentacles may also be used if desired. Chef says they taste great.

    Serves 1-2 as an entree, 4 as an appetizer.
