    2tbl peanut oil
    1 c onions, chopped
    1 tsp ground cardamom
    1 jalapeno, chopped
    1 1/2 c basmati rice
    1/2 c dill, chopped
    1 tsp salt
    3 c chicken or vegetable broth

    Recipe



    Heat oil in 2 qt saucepan over medium heat. Add onions, cardamom and jalapeno and saute one minute. Add rice and saute, stirring constantly, until grains are well coated, about 1 minute. Add dill and salt and saute over low heat 2 minutes.
    Add broth and cook over low heat until rice is tender and has absorbed all the liquid, about 25 minutes. Let rice stand for 5 minutes, then fluff with fork.
