    List of Ingredients




    1 C. each diced onion, carrots, celery
    1/4 C. olive oil
    8 to 10 ripe plum tomatoes or 1 28 oz. can of plum tomatoes, coarsely chopped, juice included
    1 6 oz. can of tomato paste
    1/2 C. red wine
    5 cloves garlic, minced
    3 T. chopped fresh oregano or 1 T. dried
    3 T. chopped fresh basil or 1 T. dried
    1 bay leaf
    salt and freshly ground pepper, to taste

    Recipe



    In a large saucepan, sauté the diced vegetables in the olive oil until tender. Add the coarsely chopped
    tomatoes, tomato paste, wine, garlic and herbs. Simmer the sauce on low heat for 1 hour. Check the
    seasoning and add salt and pepper, to taste.

    Makes about 6 cups.
