    List of Ingredients




    4 Idaho potatoes
    2 cups sweet corn
    1 poblano chile
    4 8oz chicken breasts
    1 white onion
    3 strips Applewood smoked bacon
    1/4 gal. cream
    1 gal. chicken stock
    2 tbsp Tabasco
    1 cup smoked gouda cheese ( grated )
    1 tsp allspice
    1 tsp cayenne
    1 tsp paprika
    1 tbsp chopped garlic
    salt and pepper to taste

    For Roux
    1 cup unsalted butter
    1 cup a.p. flour

    Recipe



    Grill chicken, then bake in the oven at 325 degrees for 5 mins., pull from oven and cool in refridgerator. Dice onions, poblanos and bacon. Once chicken has cooled, dice. Peel and dice potatoes, be sure to keep covered in water. In a stock pot saute bacon, when bacon browns add onions, poblanos, corn, chicken and seasonings. When onions become translucent, add chicken stock. Boil for 30 mins.. Add cream and tabasco. Reduce for one hour. stir in roux and cheese, cook for an additional 15 mins. on medium heat. Serve hot
