Canadian Cheese Soup II

1 cup water
1 large potato, shredded
1 medium onion, chopped
1 medium carrot, grated
1 stalk celery, finely chopped
1 cup chicken broth
1/2 cup half and half
1 1/2 cups shredded sharp Cheddar cheese (about 6 ounces)
(I use a 10 ounce block)
Recipe
1. Combine water, potato, onion, carrot and celery in a 2-quart casserole; cover. Microwave on HIGH (100%) until potatoes are tender, 12 to 17 minutes, stirring after half the cooking time.
2 Stir in broth and half and half; cover. Microwave at MEDIUM-HIGH (70%) until heated through, 6 to 8 minutes. Mix in cheese, stirring until melted.
