Cream of Pimiento Soup

2 4 oz jars diced pimeinto -- undrained
1/4 cup butter
1/3 cup all-purpose flour
2 14.5 oz cans chicken broth
3 cups half and half
1 tablespoon onion -- grated
1 teaspoon salt
1/2 teaspoon tabasco sauce
chopped fresh chives -- for garnish
Recipe
Process pimiento in a blender or food processosr till smooth, stopping to scrape down sides; set aside. Melt butter in a heavy saucepan over low heat; add flour and stir til mixture is smooth. Cook, stirring constantly for 1 minute. Add chicken broth and half and half gradually to the flour mixture; cook over medium heat, stirring constantly, til mixture is thickened and bubbly. Stir in reserved pimiento, onion, salt and Tabasco. Cover and chill for 8 hours. Cook soup over meidum heat 8 - 10 minutes or till thoroughly heated. Garnish with chives, if desired.
