Light Potato Soup

4 cups peeled, cubed potatoes
1 cup chopped celery
1 cup chopped onion
2 cups water
2 teaspoons salt
1 cup milk
1 cup whipping cream (or substitute Land O'Lakes nonfat half-and-half)
4 teaspoons butter
1/8 teaspoon pepper
Recipe
Peel and cube potatoes. Place in a kettle along with celery, onion, water and salt. Bring to a simmer. Cover and cook about 20 minutes or until potatoes are tender. Mash mixture with a potato masher. Stir in milk, whipping cream, melted butter and pepper. Taste for seasoning. If needed, add more salt and pepper. Return to heat and cook, stirring constantly, until soup is thoroughly heated.
