    Maryann's Wisconsin Cheddar Cheese Soup

    1/4 cup (1/2 stick) butter
    1/2 cup diced carrots
    1/2 cup diced green bell pepper
    1/2 cup minced onions
    1/3 cup flour
    4 cups rich chicken stock
    6 ounces Wisconsin medium cheddar cheese, grated
    6 ounces Wisconsin aged cheddar cheese, grated
    Salt and pepper to taste
    Milk to thin soup (optional)

    Melt butter in a 3-quart saucepan. Add vegetables. Saute until tender but not brown. Add flour and cook, stirring regularly, for about 2 minutes. Add stock and cook, stirring occasionally, until soup has thickened slightly - about 3 to 4 minutes. Add cheeses, stirring constantly until incorporated. Season to taste with salt and pepper. Simmer over very low heat 10 to 15 minutes. Thin with a small amount of milk if desired. Makes 4 to 6 servings.
