Thai Hot and Sour Soup

2 oz thin rice noodles
2 qts chicken broth
1 stalk lemon grass, cut into 2" pieces and smashed
2 tbl fish sauce (nam pla)
1 tbl chili oil
2 tsp lime zest
2 tbl canned jalapenos, minced
3 tbl lemon juice
1 1/2 tbl lime juice
1/2 lb shrimp, peeled and butterflied
8 oz straw mushrooms, canned, drained
1/4 c cilantro, choppedRecipe
Bring medium sized pot of water to boil. Add rice noodles and boil until tender, about 3-4 minutes. Drain, rinse under cold wther and drain again. Set aside.
Combine the broth with lemon grass, fish sauce, chili oil, lime zest, jalapenos, lemon juice and lime juice in a soup pot. Bring to a simmer and cook 7 minutes. Use slotted spoon to remove lemon grass. Add shrimp and cook 3 minutes.
Distribute noodles, shrimp, mushrooms and cilantro evenly between 8 heated soup bowls. Pour the broth into bowls and serve.
