Grilled Marinated Portobello Mushrooms

1/3 cup olive oil, plus extra for grilling mushrooms
Juice of 3 limes
1 small shallot, peeled and minced
2 small garlic cloves, minced
1 teaspoon chopped fresh parsley
1 teaspoon chopped fresh rosemary
1 pound sliced portobello mushrooms
Salt and freshly ground black pepper to taste
1 cup mascarpone cheese
1 tablespoon chopped fresh chives
Recipe
Whisk together the 1/3 cup olive oil with the juice from 2 limes in a medium bowl. Whisk in the shallot, 1 clove of the minced garlic, the parsley, and rosemary. Set aside.
Prepare a grill or broiler. Lightly brush the mushrooms with olive oil and season with salt and pepper. Grill or broil 4 to 5 minutes, or until they are soft. Let cool. Place the mushroom slices in the lime marinade and refrigerate for at least 1 hour.
Combine the mascarpone cheese with the juice from the remaining lime. Add the chives and remaining clove of minced garlic. Season with salt and pepper. Divide the mushrooms among 4 plates. Top with the seasoned mascarpone.
