    Lima Bean and Roasted Corn Succotash

    1 1/2 lb lima beans, frozen
    4 c corn kernels, fresh or frozen
    1/3 c chives, minced
    1 tbl tarragon, chopped
    1 tbl butter
    1 tsp salt
    1 tsp pepper

    Recipe



    Bring lima beans and 1" water to boil in a saucepan. Reduce heat and simmer, covered, until tender, about 5 minutes. Drain and set aside.
    While lima beans are simmering, put corn and 2" water in a saucepan and bring to a boil. Reduce heat and simmer, covered, until tender, 3-5 minutes. Drain well and raost corn in a large dry cast iron skillet, stirring occasionally, until golden brown, about 3 minutes.
    Stir in lima beans, chives, tarragon, butter, salt and pepper. Cook until flavors are blended, about 5 minutes.
    Serve.
