    "Hummingbird Cake"

    List of Ingredients




    3 cups all-purpose flour
    2 cups sugar
    1 tsp. salt
    1 tsp. baking soda
    1 tsp. cinnamon
    3 eggs beaten
    1 1/2 cups oil
    1 1/2 tsp. vanilla
    1 8-oz. can crushed pineapple, undrained
    2 cups walnuts or pecans, chopped
    2 cups bananas
    1/2 cup maraschino cherries, well drained or dehydrated

    Combine dry ingredients in a large mixing bowl. Add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, cherries, bananas, and 1 cup of nuts. Spoon batter into 3 well greased and floured 9" cake pans. Bake at 350o for 25-30 minutes or until testing shows cake is done. Cool 10 minutes. Remove from pans. Spread cream cheese frosting between layers and on top and sides of cake. Sprinkle with remaining cup of nuts.

    "CREAM CHEESE FROSTING"

    Ingredient:

    1 3/4 cups powdered sugar
    1 (8-ounce) package cream cheese, at room temperature
    1 teaspoon vanilla extract

    Very carefully mix the above ingredients with a wire whisk, only until blended.
