    Suggested decoration:Combine icing sugar and cocoa and sift into shallow dish. Roll truffles in mixture to coat evenly.Store or freeze (as above).Yield: 45-50

    Notes: A sweet, nutty truffle that is perfect for afternoon tea.

    List of Ingredients




    8 oz white chocolate
    2 Tbs unsalted butter, room temperature
    1 cup whipping cream
    1/8 cup Amaretto liqueur
    1/2 cup toasted almonds, chopped
    3/4 cup icing sugar for decoration
    1/4 cup unsweetened cocoa for decoration

    Recipe



    Scald cream in heavy saucepan. Remove from heat and cool to room temperature. Strain through sieve. Melt chocolate in double boiler over hot water. Remove from heat. Beat butter into chocolate until smooth. Beat Amaretto liqueur and almonds into chocolate mixture until well blended. Vigorously beat cream into chocolate mixture with whisk until light and fluffy. Chill until firm, 1-3 hours. Shape (as above). Freeze or decorate.
