    Suggested decoration: Dip truffles in semisweet chocolate and sprinkle with coconut on top while chocolate is still wet. Store or freeze (as above).Yield: 40-45

    Note: A beautiful white and dark truffle with a real punch!

    List of Ingredients




    8 oz white chocolate
    2 Tbs unsalted butter, room temperature
    1 cup whipping cream
    1/4 cup coconut liqueur
    1/4 cup white rum
    (or)
    1/4 cup coconut rum liqueur
    1 lb semisweet chocolate for decoration
    1/2 cup shredded coconut for decoration

    Recipe



    Scald cream in heavy saucepan. Remove from heat and cool to room temperature. Strain through sieve. Melt chocolate in double boiler over hot water. Remove from heat. Beat butter into chocolate until smooth. Beat in coconut liqueur and white rum OR coconut rum liqueur un til well blended. Vigorously beat cream into chocolate mixture with whisk until light and fluffy. Chill until firm, 1-3 hours. Shape (as above). Freeze or decorate.
