    Best Baked Beans

    Three kinds of beans slowly simmered in a brown sugar-catsup sauce and a cheese topping make this a first-rate variation of the old-fashioned picnic standard.

    6 slices bacon
    1/2 cup chopped onion
    1 15-1/2-oz. can butter beans, rinsed and drained
    1 15- or 16-oz. can pork and beans in tomato sauce
    1 15-oz. can red kidney beans, rinsed and drained
    1/2 cup packed brown sugar
    1/3 cup catsup
    2 Tbsp. Worcestershire sauce
    1 cup shredded American cheese (4 oz.)

    In a large skillet, cook bacon over medium heat until crisp. Drain on paper toweling, reserving 2 tablespoons drippings in skillet. Crumble bacon and set aside. Add onion to reserved drippings; cook and stir over medium heat about 4 minutes or until tender.

    In a 2-quart casserole, combine butter beans, pork and beans in tomato sauce, kidney beans, brown sugar, catsup, and Worcestershire sauce. Stir in bacon and onion mixture. Bake, covered, in a 350 degree F oven about 45 minutes or until bubbly around edges. Uncover and stir. Sprinkle with cheese; stir just slightly, leaving some of the cheese on top. Bake, uncovered, about 5 minutes more or until cheese melts. Makes 8 side-dish servings.

    Per serving: 310 cal., 11 g total fat (5 g sat. fat), 24 mg chol., 959 mg sodium, 44 g carbo., 7 g fiber, and 14 g pro. Dietary exchanges: 1-1/2 starch, 1-1/2 other carbohydrate, 2 very-lean meat, 1 fat.
