    8 oz cream cheese
    4 large eggs
    2 cup pork rind flour (make by crushing pork rinds into a fine flour)
    1/2 cup grated parmesian cheese
    1 tsp baking powder
    1/2 cup Italian Cheese Mix shredded cheese (found in the refrigerator section with other shredded chesses)
    1 cup shredded Sharp Cheddar cheese
    1 tsp pepper or to taste
    1 tsp garlic powder or to taste
    1 tsp dried parsley

    Preheat oven to 425. Bring cream cheese and eggs to room temperature. Mix cream chesse and eggs, one egg at a time, until smooth.

    Add pork rind flour, baking powder, seasonings and chesses. Mix until blended. Mixture will be thick.

    Mound mixture on a non-stick sheet pann that has been sprayed with butter-flarored Pam. The mounds should be about the size of a lemon.

    Bake 12-15 minutes. Remove from oven and brush with melted butter.
