    Coconut Macaroon Snowballs

    4 egg whites
    1 1/4 cups Splenda
    1/8 teaspoon cream of tartar
    1/4 teaspoon salt
    1/4 teaspoon almond extract
    1/2 teaspoon vanilla extract
    2 1/2 cups unsweetened flaked coconut
    1/4 cup Atkins Bake Mix
    1/4 cup almonds - finely chopped (optional)

    Recipe



    Lightly grease baking sheet. Beat egg whites, vanilla and cream of tartar until medium peaks form. Gradually add Splenda.

    Toss together Atkins Bake Mix, salt and coconut, and fold them into the egg white mixture. Form into 1 inch balls and roll in unsweetened coconut.

    Bake at 350 degrees for 18 to 20 minutes. Cookies will be slightly golden. Allow cookies to cool on the baking sheet for easy removal.
