Recipe Introduction
This is an easy one-pot supper that's great with a salad or green vegetable .
List of Ingredients
- 1/4 cup chopped onion
- 3 Tablespoons chopped green pepper
- 2 Tablespoons oil
- 1 cup raw rice
- 2 cups stewed tomatoes
- 2 teaspoons sugar
- 1/2 cup grated Parmesan cheese
- 4 pork chops or 3/4 hot sausage
Instructions
- Saute onions, green peppers and rice in oil until rice is translucent .
- Add sugar to tomatoes , stir and add to skillet .
- Top with pork chops and cheese .
- Bake covered in a 350 oven for about one hour .
Serves 4 .
Final Comments
A ten inch oven proof skillet works well . To make your own stewed tomatoes : add 1 tbs. sugar ,1/2 tsp. salt and 1 tbs. butter to canned or fresh tomatoes and bring to a boil then turn off . You can add the sugar from the recipe to this and then follow the recipe .
