Tortellini Soup

Recipe Introduction
To the basic recipe below, Melanie adds drained, sauteed bulk sausage, fresh (instead of dried) basil, diced tomatoes with green chiles and crushed red pepper when she makes this for her Dad!!
List of Ingredients
- 2 teaspoons olive oil
- 1/2 cup chopped onion
- 1 clove garlic, chopped
- 2 14 1/2 oz. cans chicken or beef broth
- 1 cup (4 oz.) cheese filled tortellini
- 1 14-1/2 oz. can diced tomatoes, undrained
- 1 1/2 teaspoons dried basil leaves
- 1 package (10 oz.) chopped spinach, thawed and drained
- Grated parmesan cheese
Instructions
- In 3 quart saucepan, heat oil over medium heat.
- Add onion and garlic and cook until tender.
- Add broth and bring to a boil.
- Add tortellini and cook according to package directions.
- Stir in tomatoes, basil and spinach and reduce heat and simmer for five minutes.
Sprinkle with parmesan cheese when serving.
Final Comments
With garlic bread and a salad, this makes a good hearty meal!
