    Pecan Coffee Cake Muffins

    From the back of a box of Lady Lee Frosted Corn Flakes, late 1980's

    Recipe Introduction


    This goes way back to when Lucky's Food Stores were still around. We had a pecan tree in our back yard, and made this with fresh pecans. Really great stuff.

    List of Ingredients




    1 egg
    1/3 cup vegetable oil
    1 cup milk
    1 cup crushed frosted corn flakes
    1/3 cup brown sugar
    1/3 cup chopped pecans
    1 cup flour
    1 tsp. baking powder
    1/4 cup granulated sugar
    1 tsp. cinnamon
    1/2 tsp. salt

    Recipe



    Mix together the egg, vegetable oil and milk.
    Add the crushed frosted corn flakes.
    Let stand about 5 minutes.
    Stir mixture and add the brown sugar, pecans, flour, paking powder, granulated sugar, cinnamon, and salt. Blend well.
    Divide among 12 paper lined muffin cups. Bake 20-25 minutes at 400 degrees.
    If desired, brush tops with melted butter and sprinkle with sugar and cinnamon mix.
    Serve warm.
