    List of Ingredients


    • 5 lbs watermelon rind
    • 5 lbs sugar
    • 1 1/2 qts water
    • 1 qt vinegar
    • mixed pickling spice tied in a cloth
    • 1/2 c lime juice


    Instructions


    1. put rind in water enough to cover and add lime juice. let stand for 2 hours
    2. wash rind in several clear waters, then cook in clear water until they are tender and look watery
    3. pour off water
    4. add sugar, vinegar and 1 1/2 qts fo water anc cook slowly until they are pickled
    5. will take about 4 hours
    6. put in jars and seal
