    • 1 1/2 pounds lean beef, sliced thin
    • 2 potatoes, cubed
    • 3 stalks celery, diced
    • 1 onion, chopped
    • 2-3 carrots, dice
    • 1/4 green bell pepper, diced small
    • 1 qt beef stock
    • 1-2 Tablespoons flour (soy or all purpose)
    • salt and fresh ground pepper to taste
    • 1-2 Tablespooons olive oil
    • 1-2 teaspoons Worchestershire sauce


    Instructions


    1. Season the beef with salt and pepper. Lightly coat with flour. Heat olive oil in a stock pot or dutch oven over medium heat. Add beef in small batches. Brown & remove to a bowl. Continue until all beef is browned.
    2. Saute the onions until translucent. Add the Worchestershire sauce and a little bit of broth to bring up the browned bits on the bottom of the pot.
    3. Add the bell pepper, celery and carrots. Saute for about 3 minutes. Add the beef back to the pot, include the juices from the bowl. Add broth and a little water if needed. Add potatoes. Bring to a boil and reduce to simmer. Simmer until potatoes are cooked through.
