Recipe Introduction
This recipe is the way my family has been making Split Pea Soup for decades.
List of Ingredients
- Salt Pork, about a 2"x4" chunk, cubed
- 1 medium to large onion, chopped
- 3 stalks celery, diced
- 3 carrots, diced
- 1 pound split peas, rinsed
- 3-4 cups liquid (can be stock or water) enough to cover
- 1 T olive oil
- 4 cloves garlic, chopped (optional)
Instructions
- Heat large soup pot over medium heat. Add olive oil. Brown the salt pork until the fat is rendered out and you have about 3 tablespoons fat total in the pot. Remove the salt pork pieces.
- Add onion, celery, carrots and garlic. Saute until onion is transluscent.
- Add the peas and stir to coat.
- Add the liquid and bring to a boil. Reduce to simmer for anywhere from 2-4 hours. This will result in a thickened soup. You can add the salt pork back in if you want.
- Serve with diced onions, shredded cheese, diced ham, bacon bits if desired.
Final Comments
This can be made vegetarian by using 3 Tablespoons olive oil and omitting the salt pork entirely.
