    2 lb. fresh spinach (or 2 pkgs. frozen chopped spinach)
    2 qts. of chicken broth or 2 cubes
    3 T. butter
    2 T. flour
    1 t. salt
    dash pepper
    1/8 t. nutmet
    hard cooked egg (for garnish)

    Recipe



    Wash, drain, and chop spinach. Add to stock and boil. Simmer uncovered for about 8 minutes. Strain spinach and press it through sieve with a spoon to remove most of the liquid - you may chop it finer if desired. Melt the butter, add flour and stock 1 cup at a time. Bring to a boil, stirring constantly. Add spinach, salt pepper and nutmet. Simmer 5 minutes more. 4-6 servings.
