    Makes 12 biscuits

    2 cups all purpose flour
    1 tablespoon low sodium baking powder
    4 tablespoons unsalted butter, cut into pieces
    1 cup milk

    Recipe



    Sift together the flour and baking powder. Cut the butter into small pieces and add it to the flour mixture. Use two knives, a pastry blender, your fingertips or a food processor to mix the flour and butter to the consistency of corn meal.

    Add the milk and stir to blend. Turn the dough onto a lightly floured board and knead for a minute or so; the dough should be evenly soft, the same consistency throughout.

    Dust your hands with flour, cut pieces of dough 2 to 3 inches square and roll them into balls between your palms. Place them on a greased, floured baking sheet and press gently to flatten slightly.

    Chill in the refrigerator for at least a half hour before baking. While the biscuits are chilling, preheat the oven to 450°. Bake the biscuits on the top rack of the oven until they begin to brown, about 15 minutes.
