    List of Ingredients


    • 1 cup heavy cream
    • 1 cup milk
    • 1/2 vanilla bean, split lengthwise
    • 1/2 cup sugar
    • 6 egg yolks


    Instructions


    1. Combine the cream and milk in a saucepan. Using the tip of a sharp knife, scrape the seeds of the vanilla bean into the milk, then add the pods. Add the sugar and place over medium heat. Bring just to a boil, stirring to dissolve the sugar. Meanwhile, place the egg yolks in a bowl. When the milk mixture comes to a boil, remove from the heat and ladle 2 spoonfuls into the yolks while whisking constantly. Return the saucepan with the remaining milk mixture and continue cooking over medium heat, stirring constantly, for 3 to 5 minutes, until the mixture coats the back of a spoon. Pour through a fine-mesh sieve placed over a bowl. Then nest the bowl in a bowl of ice to cool.
