    Apple Cider Pound Cake

    Recipe Introduction

    This is a very unusual type of cake but it is so great looking and so great tasting. You just got to try this when you have a bounty of apples on hand. Warning, this cake is addictive.

    List of Ingredients

    1 cup real butter softened
    1/2 cup shortening
    3 cups sugar
    6 medium eggs
    3 cups all-purpose flour
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    1-1/2 teaspoons apple pie spice
    1 cup apple cider
    1 teaspoon vanilla extract

    Cream butter and shortening; gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition. combine next 4 ingredients; add to creamed mixture alternately with apple cider, beginning and ending with dry ingredients, stir in vanilla. Pour batter into a greased and floured 10 inch tube pan. Bake at 325 for 1 hour and 20 minutes or until the cake tests done. cool in pan 10 to 15 minutes; remove from pan and cool completely on a rack.
