    Chocolate Zucchini Cake

    Gardens produce zillions of Zucchini and while there are many tastey dishes that can be made from this abundant squash, this cake is a winner. Enjoy, Enjoy

    List of Ingredients

    1/2 cup plus 1 tablespoon margarine, softened
    2 cups sugar
    3 squares unsweetened chocolate melted
    3 medium eggs
    1/2 cup milk
    2 tablespoons grated orange rind
    2 teaspoons vanilla extract
    2 cups coarsely grated unpeeled zucchini
    2-1/2 cups all-purpose flour
    2-1/2 teaspoons baking powder
    1/2 teaspoon salt
    1 teaspoon ground cinnamon
    2 tablespoons powdered sugar
    1/2 teaspoon ground cinnamon

    Cream margarine; gradually add 2 cups sugar, beating until light and fluffy. beat in chocolate. Add eggs, one at a time, beating well after each addition. Beat in next 4 ingredients. combine flour, baking powder, soda, salt, and 1 teaspoon cinnamon; add to creamed mixture, mixing well. Pour batter into a greased and floured 10 inch Bundt pan. Bake at 350 for 1 hour and 5 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 to 15 minutes; remove frompan, and place on a wire rack. Mix powdered sugar and 1/2 teaspoon cinnamon; sift over warm cake. Cool completely. Fill center of cake with strawberries, if desired.
