    Pumpkin Oatmeal cake

    Recipe Introduction

    This makes a really good Fall dessert and it is so moist and good.

    List of Ingredients

    3 cups all-purpose flour
    2 teaspoons baking powder
    1 teaspoon baking soda
    1 teaspoon cinnamon
    1/4 teaspoon allspice
    1/8 teaspoon cloves
    2 eggs
    1 (16 ounce) can of pumpkin
    1 cup brown sugar
    1/2 cup maple flavor syrup

    1/4 cup salad oil
    1 cup quick cooking oats, uncooked

    Make Streusel topping ahead. Prepare oven to 350. Grease a Bundt pan. In large bowl mix flour, next 5 ingredients, and 1 teaspoon salt. In medium bowl, with fork or whisk, beat eggs, pumpkin, brown sugar, maple syrup, and salad oil until blended. Stir pumpkin mixture and oats into flour mixture just until flour is moistened. Batter should be lumpy. Spoon batter into pan. Sprinkle streusel topping evenly over batter. Bake about 1 hour and 15 minutes or until the cake tests done. If topping starts to brown to quickly, cover loosely with foil during last 10 minutes of baking. Cool in pan 10 minutes;remove from pan. Cool completely on rack. STREUSEL TOPPING: In small saucepan over low heat, melt 1/2 cup margarine, remove saucepan from heat. Stir in 3/4 cup all-purpose flour, 1/2 cup uncooked oats, 1/4 cup sugar until blended. Mixture may be crumbly.
