    Pumpkin Unside Down Cake

    Recipe Introduction

    This cake will make you want to slice a big hunk of it and grab a mug of hot chocolate and sit by the fire dreaming of good things to come. I found this recipe in 1997.

    List of Ingredients

    3 large eggs
    2 cans pumpkin (1 lb)
    1-1/4 cups sugar
    FILLING:

    1 can (12 ounces) evaporated milk
    2 teaspoons cinnamon
    1 teaspoon nutmeg
    1/2 teaspoon ginger

    Topping:

    1 package yellow cake mix
    3/4 cup (1-1/2 sticks) margarine
    1 cup chopped walnuts

    Preheat oven to 350. Make filling. In medium bowl, lightly beat eggs. Add remaining filling ingredients; stir until well combined. Pour into ungreased 13x9x2 inch pan. For the topping, sprinkle the dry cake mix evenly over filling. Drizzle margarine evenly over cake mix. Bake 30 minutes or until topping is golden brown. Let cake cool completely on wire rack. Serve with whipped cream
