    Recipe Introduction

    This cake reminds me of a wedding cake, the texture is so fine. I made this cake numerous of times for my children. Sometimes, I halved the recipe and made an 8x8 just for the three of us. This recipe is also economical and can be made with few ingredients, mostly ingredients that is usually on hand. Give this a try, it will surprise you.

    List of Ingredients

    2 cups all-purpose flour
    1-1/4 cups sugar
    1 tablespoon plus 1/4 teaspoon baking powder
    1 teaspoon salt
    1 cup milk
    1/2 cup shortening
    1-1/2 teaspoons vanilla extract
    3 medium egg whites
    1/4 cup butter or margarine
    2 cups powdered sugar

    Mix first 4 ingredients in a large bowl. Add milk, shortening, and 1-1/2 teaspoons vanilla; beat at medium speed of electric mixer until well blended. Add egg whites (at room temperature) and beat 2 minutes. Pour batter into a greased and floured 13x9x2 inch pan. Bake at 350 for 20 minutes to 25 minutes or until tooth pick inserted comes out clean. Cool. Melt butter in a heavy saucepan. Cook over low heat until butter turns a golden brown. Remove from heat. Add powdered sugar, half and half, water, and 1-1/2 teaspoons vanilla extract. Beat 3 minutes at medium speed of an electric mixer. spread mixture evenly over top of cake.
    2 tablespoons half and half
    2 tablespoons water
    1-1/4 teaspoon vanilla
