    Low Fat Gingerbread

    I made this and it is very good and healthy

    List of Ingredients

    1/2 cup prune puree
    1 cup sugar
    1 cup sugar
    1 cup molasses
    1 cup boiling water
    2 teaspoons baking soda
    1-1/2 cups all-purpose flour
    1 teaspoon ginger
    1/2 teaspoon cloves
    1/2 teaspoons cinnamon
    1/2 teaspoons salt
    2 eggs, beaten

    Heat oven to 350. Spray a 9x9 pan with vegetable spray. Measure prune puree, sugar and molasses into mixing bowl; stir to mix well. Add boiling water and baking soda, stir until smooth and foamy. Beat in dry ingredients, which have been stirred together. Add eggs last. Pour batter into baking pan and bake for 35 to 40 minutes or until tested done. Do not overbake. Let cake to cool in pan. Dust top with confectioners' sugar. Lemon Sauce as Follows:
    1/3 cup sugar, 2 tablespoons cornstarch, 1 lemon (juice and grated rind plus water to equal 1-2/3 cups). Mix sugar and cornstarch in small saucepan. Stir in grated lemon rind and juice plus water and cook over medium heat until thick and clear. If you cannot find prune puree, use a small jar of baby food prunes.
