    Mama's Apple Sauce Cake

    My Mom baked tons of food for Christmas. She always baked four or five cakes. My sister had to have a coconut cake, my brother always wanted a carmel cake. My father wanted a chocolate cake and I wanted the Apple Sauce cake. While all of the cakes were out of this world, the Apple Sauce cake reminded me of the plum pudding in the story, "The Christmas Carol". My mom worried that it would be to dry and something go wrong with it. We all sampled it on Christmas day and as always the cake received rave reviews. Perhaps on your next Christmas holiday you can share this recipe with those you love.

    List of Ingredients

    4 cups of all-purpose flour
    1 cup of choped walnuts
    2 teaspoons of soda
    2-1/2 cups of apples or apple sauce, let apples get hot and add soda and stir. let cool.
    1/4 cup cocoa
    1/2 box of white raisins (let raisins stand in hot water to plump up)
    1 cup shortening
    1 cup cherries
    2 teaspoons of vanilla extract
    1 teaspoons of lemon extract
    3 eggs
    1/2 teaspoon nutmeg
    2 teaspoons cinnamon
    1-1/2 cups white sugar
    pinch of salt
    Mix all of the ingredients in a very large bowl. Grease and flour a pound cake pan. Bake for 350 for 30 minutes and lower oven to 300 and bake 30 more minutes or until tests done.
