    Fresh Tomato Pie

    Recipe Introduction

    This pie will really fool you, it is not really a dessert but since it is called a pie and bakes like a pie, well it deserved to be put in the pie category. This pie is so simple and easy to make and especially in the summer when you have all that abundance of tomatoes and don't know what to do with all of them. You can bake this pie and have a salad and fruit and you have a nice meal. My daughter really enjoys this recipe and I often make it for her and myself in the summer. I hope you will give it a try and see if you don't think it is delicious.

    List of Ingredients

    2 cups Bisquick
    3/4 cup milk
    4 medium tomatoes sliced
    1 green pepper sliced
    1 teaspoon basil
    1 teaspoon chives
    1 teaspoon parsley
    1-1/2 cups grated cheddar cheese
    1/2 cup mayonnaise
    Heat oven to 400. Mix bisquick and milk. Grease pie pan;press;into bottom of pie and shape into a piecrust. Layer tomatoes and green pepper, sprinkling each layer with herbs. Mix cheese and mayonnaise and spread on top. Bake 20 to 35 minutes until crust and top is golden. Let stand 10 minutes before cutting.
