    High Fiber Fruit Pie

    Recipe Introduction

    I just love fruit and this pie has lots of it. If you are trying to add fiber to your diet then this pie is a winner. If you love fruit then you will love to serve up a thick slice of this pie and a good cup of coffee. Enjoy.

    List of Ingredients

    2 cups each, fresh or frozen, and sliced.
    blueberries
    raspberries
    strawberries
    rhubarb

    4 cups chopped peeled baking apples
    2 cups sugar
    2/3 cup all-purpose flour
    2 tablespoons lemon juice

    Egg wash as follows:
    1 egg yolk
    1 to 2 tablespoons water
    4 singles unbaked pie crustsIn a bowl, mix filling ingredients and spoon into crust. Put top pie crust on and seal and flute edges; Beat yolk and water, brush over pies. Cut slits in top of crust. bake at 350 for 50 to 60 minutes or until golden brown. Makes 2 pies
